Grown and harvested on the Chalkidiki Peninsula of Northern Greece, a land with a unique climate and soil characteristics, these olives range in color from straw gold to golden green. A variety of olive that can be cured in many different ways, Halkidiki olives are invariably plump and meaty and offer a fruity, buttery and pleasantly sour flavor.

Curing Methods

Chalkidiki olives are picked from September to about the middle of October. Then the olives are treated in a diluted lye solution, acquiring a characteristic green gold color.

Chalkidiki Olives are first cured naturally with salt and then darkened through oxidation. The final product has an acquired dark black color. This curing method is typical of California.

Chalkidiki Olives are harvested in October and cured naturally with salt acquiring a blonde color.

Green Chalkidiki Olives (less salted product) are packed in varnished cans and pasteurized at 70-90˚C.

Chalkidiki Olives are cured naturally with salt and dried in an oven.
